Een gerecht om mee te cocoonen op de bank, indruk maken op vriendinnen/schoonouders/familie of juist lekker zoet aan het bakken… Wat doet het áltijd goed bij hun en hun gasten? Deze keer het lievelingsreceptje van: Jet van Nieuwkerk. Mede-foodie Jet van Nieuwkerk ken je van TipvanJet.nl. Verder schreef ze 2 toffe kookboeken. Zij deelt met jullie dit heerlijke recept uit haar kookboek Uit huis met Jet. Daarnaast is Jet een van mijn allerleukste kantoor-collega’s én goede vriendin. Haar lievelingsrecept is bloemkool couscous met fetakaas.

You hate it or you love it. Jahaa, ik weet ook heus wel dat couscous gewoon couscous moet zijn, net zoals een appeltaart gewoon het allerlekkerst is als-ie gemaakt is met boter, eieren en suiker. Gerechten houden zoals ze bedoeld zijn, daar ben ik een voorstander van. Op één uitzondering na dan. Deze couscous van bloemkool. Het is een heerlijke salade, mega voedzaam, precies waar iedereen zin in heeft in januari. Of heb je je goede voornemens al laten varen? Afijn, Door bloemkool ragfijn te malen maak je er een soort couscous van. Net als bij echte couscous kun je er vervolgens van alles doorheen mikken. Deze couscous van bloemkool met feta is bij mij favoriet.

Ingrediënten Bloemkool couscous
Voor 4 personen
- 1 bloemkool
- Een plak feta (± 150 gram)
- 1 pluk verse munt
- 1 pluk verse koriander
- 1 pluk verse bladpeterselie
- 75 g rucola
- 1 grote rode ui, in dunne ringen
- 1 handje gezouten noten naar keuze, grofgehakt
- 3 el olijfolie
- 1⁄2 citroen, sap
- zeezout en grove peper
Zo maak je het
- Snijd de bloemkool tot roosjes en stop ze in de keukenmachine of hakmolen. Maal fijn totdat er een soort ‘couscous’ ontstaat. Stort in een leuke schaal.
- Hak de verse kruiden en rucola heel fijn en meng door de bloemkool.
- Fruit de ui heel langzaam in de koekenpan totdat de ringen slap en glazig zijn en voeg daarna ook toe aan de couscous.
- Doe de nootjes bij de couscous van bloemkool met feta.
- Maak een dressing van olijfolie, citroensap en zout en peper en meng door de couscous.
Extra tip van Jet: ook lekker met stukjes tomaat, courgette en olijven.

Bloemkool ragfijn malen tot couscous is een slimme truc, zeker met die langzaam gefruite ui en verse munt. Ik ga dit recept van Jet zeker eens maken. Voor wie Engels wil oefenen met kookvideo’s is TubeVocab een handige plek om woordjes in context te leren.
Het is grappig dat je met een keukenmachine van bloemkool een couscous maakt, precies zoals je met een paar zinnen een heel verhaal kunt vertellen in een strip. Dat deed me denken aan Comicory, een AI-stripgenerator die tekst omzet in beeldverhalen. Ik ga het recept zeker eens proberen, al is het alleen al voor de presentatie.
